Earlier this week, the temperatures here in the Midwest reached into the high 50s, the sun shone with real warmth, and the robins sang their cheery, rollicking spring songs. Now, as I type this recipe, the wind is whipping snow around the house outside and the temperatures, taking into account the wind chill, have fallen into the low 20s. Some might consider ice cream an odd dessert to make in the middle of winter, but the kids and I always enjoy this cold and delicious treat. I usually eat my ice cream as a bedtime snack; the kids usually eat their ice cream right away after breakfast, before they brush their teeth. I like to make my desserts as low-sugar as possible, while still retaining the right texture and flavor. You can reduce the sugar in most recipes by at least half–and sometimes more! Experimenting with Eggs [Pepperjack and Egg Skillet Cobbler]
The recipe for Simple Berry Skillet Cobbler from The Lodge Cast Iron Cookbook inspired me to create this egg dish. I really like the crunchy and buttery crust used to form the base of a sweet cobbler. I wondered if I could take the same crust and use it as the base of an egg dish. (We often find ourselves with an overabundance of eggs, so I like to experiment with them in the kitchen by trying new recipes and sometimes creating my own!) Almost Authentic Fettuccine Alfredo
I haven’t posted a recipe on here in a while! I found this recipe after Brian and I watched a video from Epicurious (available here), which completely changed my thinking about how to make alfredo sauce. I never knew you could make alfredo sauce without using heavy cream, or some sort of flour-based mixture. I tried this recipe tonight, and we really enjoyed the results!
